This time we're watching the hilarious Chevy Chase comedy, Fletch. We're cooking up a scrumptious dinner of steak sandwiches along with some cleverly disguised side dishes and Doctor Jellyfinger cookies for dessert. We screened the movie and engaged in a lively conversation with our friends covering topics relating to the film such as our favorite Fletch disguises, funniest one-liners, and even the state of investigative journalism today. We hope you enjoy this meal inspired by the 1985 classic film.... and just charge it to the Underhills!

Fletch's Faux Caviar
Corn & Black Bean Dip
2 cans black beans, drained & rinsed
2 cups cooked sweet corn (4 cobs) or 2 cans whole kernel corn, drained
1 bunch cilantro, chopped
1 small red onion, finely diced
2 jalapeños, seeded & diced
1 garlic clove
juice of 1 lime
2 Tbsp. olive oil
1 tsp. ground cumin
salt & pepper to taste
Combine ingredients and refrigerate at least one hour. Serve with tortilla chips.
Faux Lobster Thermidor
Stuffed Sweet Peppers
1 pound mini sweet peppers, cut lengthwise and remove seeds
8 oz. cream cheese, softened
3/4 cup finely shredded cheddar
1/4 cup minced green onion
1/2 tsp. onion powder
1/2 tsp. salt
1/4 tsp. black pepper
Preheat oven to 425 degrees and line baking sheet with parchment paper.
Combine filling ingredients and stir until mixed. Fill pepper halves with cream cheese mixture. Place stuffed peppers on baking sheets and bake for about 15 minutes. Enjoy!
Steak Sandwiches
Beef tenderloin, sliced super thin
1 bell pepper, thinly sliced
1 onion, thinly sliced
hoagie bread rolls
Provolone cheese slices
butter (to grease your skillet)
seasoned salt & black pepper
Sandwich spread:
1/2 cup mayo
1 Tbsp. Dijon mustard
1/4 cup finely diced green onion
2 tsp. Worcestershire sauce
1/4 cup grated Parmesan cheese
1/2 tsp. garlic powder
Cook peppers and onions in a hot cast iron skillet greased with melted butter until soft, remove from pan. Add more melted butter and cook sliced steak over high heat until done to your liking - do not overcook. Sprinkle with seasoned salt and black pepper to taste. Serve hot on hoagie bread rolls with mayo spread, veggies, and a slice of Provolone cheese. Yum!
Dr. Jellyfinger Cookies
8 oz. cream cheese, softened
2 sticks butter, softened
1/4 cup granulated sugar
2 1/2 cups flour (we use GF)
1/2 tsp. salt
1 cup seedless raspberry jelly
1 egg beaten with 1 tsp. water
Additional sugar for topping
Add cream cheese, butter, and sugar to a large bowl and beat with a mixer until light and fluffy. Turn mixer to low and add in flour and salt until just combined. Divide the dough in half and flatten into 2 rounds, then cover with plastic wrap and refrigerate for an hour. Preheat oven to 350 degrees and line baking sheets with parchment paper, set aside. Roll dough onto a floured surface until its about 1/8" thick. Using a knife, cut into 3" squares. Place the squares onto baking sheet and fill with a spoonful of jelly. Then fold the edges over the middle, using the egg wash to seal. Sprinkle with additional sugar. Bake cookies for about 20 minutes and allow to sit for 5 minutes before removing to a cooling rack. These are a fun centerpiece for your dinner party, and also delicious!

White Sangria
10 oz. Peachtree Schnapps
10 oz. triple sec
10 oz. simple syrup
3 bottles white wine
Combine ingredients and garnish with sliced fruit.
Gatorade Shandy
Combine 50/50 Gatorade and Coors Banquet Beer
Stir and garnish with a lime.
Provo Cherry Limeade Martini
Shot of simple syrup
Squirt of cherry syrup
Shot of lime juice
Shot of vodka
Combine in a shaker with ice and garnish with lime.
